I was just wondering if any of the extra day activities need to be reserved in advance or if it can all be done day to day? Also, do they all need to be paid in cash -- or can something more expensive like the Abu Simbel flight be paid with credit card?

Catherine has pretty much done my job for me in helpfully advising you on organising the extra activities!
In regard to paying by card, in certain cases this will be possible but it certainly should not me counted on. I would advise bringing your card but expect to be asked to pay by cash first. Your guide will be able to advise you at the start of the tour whether you will definately need cash or card.

When I did this tour last fall, the optional tours were discussed a few days prior to the day they occured, so you had time to make up your mind and they usually had to know if you were interested in doing an optional tour the day before.
Abu Simbel was great, but everyone on our tour took the bus tour option. It was much more reasonable in price. You had to get up early, but you could sleep in the bus. It was interesting to drive through the desert.
