This may be a stupid question but do we tip the person who is meeting us at the airport? If so, what is an appropraite amount?
Is there time to change money at the airport? I assume I am going to need some Egyptian currancy for tipping at the hotel when I arrive.

No this is not necessary.
I would suggest that you acquire some Egyptian Pounds (pocket Change so to speak) before you leave Canada and then exchange your monies in either the hotel or a bank when you arrive.
If you would like to change monies in the airport then I'm sure it would also be possible to ask the Imtrav representative that will meet you in the airport.

I can answer the question Joanne. I did Egypt in April and the man who met us from the airport refused the tip and told us its covered in our tipping kitty. Our tour leader Hazem told us the same.
