Hi - I didn't take the Felucca trip, so I can't help out there, but as far as wandering around Cairo on your own and riding donkeys and camels and my general Egypt travel tips, check out the webpage I created about my trip with imtrav. You will have an amazing time - I loved it!

Re: Beyond the Pyramids December 21st
You've got a lot of questions!
I went this year in October and its was great. You will love it. It was my first trip and I was travelling alone, but found it easy to relax and fit in.
You do need really warm clothing for Mt Sinai because you'll have to wait for the sunrise at the top. Most people had a thick fleece and hat.
travel pillow? Yes
there are no facilities on the felucca but you can pick a nice spot on the river bank. Watch out for water buffalo though. Using the toilet became the main topic of conversation, but everyone has a laugh about it - it'll be ok, trust me.
You can bathe in the Nile, its very clean and clear, although this does go against the guide books - especially lonely planet - but don't worry, everyone will dive in every now and then and you'll be fine.
Trekking's the best bit - by then you'll be hardened to the conditions and be lovin it.
You will (most likely) go inside one of the pyramids, but you will see alot better interiors later in the tour. Don't go before.
You're arrival and departing times are similar to mine were. It was no problem.
Cairo is so busy at night it seems safe enough, but you will get hassled to buy things and asked to go back to peoples shops. You'll learn to be firm soon enough. ("la" = no)
Camels - have a mind of their own. My only advice is to to get a "friendly looking one"
Donkeys - Comedy. Enjoy.
the best advice I can give is
1) Don't aim to cover everything with a camera and devote all your time to photos - just enjoy the moment
2) Drink lots of water
