We are going to Cairo a few days early. I have read the suggestions about taking a Giza to Saqqara camel trip. We are also interested in visiting an oasis - by camel too if such a thing exists.
Who would we book day tours through? And should we book these before we go or once we get there?

Both activities that you want to do are best booked once you arrive.
For the Giza - Saqqara camel trips there will be plenty of companies vying for your custom. To give you a frame of reference: The Imaginative Traveller group price is 45.00 LE per person. We use the KS stables our contact there is Ramadan.
The closest oasis to Cairo is Faiyum. You'll be able to hire a car or taxi from the Pyramids area in Cairo. However, it will be quite a trip and will work out quite expensive as Faiyum isn't exactly just on the outskirts of Cairo.
