I am planning to travel to Egypt/Jordan and possibly Turkey at the end of the year. December is pretty much the only time I can get there. What is the weather and temperatures like and the size of the crowds during this time? Is it worth putting off the trip until a more ideal season such as Spring/Autumn?

You can visit Egypt pretty much any time of year.
Being in the northern hemisphere, December will be one of the cooler months, but generally daytime temperatures are still pleasant.
The early part of December is usually quiet but if you plan to visit around Christmas it will almost certainly be busy.
Jordan will be colder and nights can be very cold. In winter, it is not uncommon for there to be snow in Amman.
If you want to visit all of Turkey, then December is not a good time to go. It can be very cold and many parts of the East could be snowbound.
However, if you only want to visit the coastal areas of the south west then December can be OK. It is a good time for trekking in the south west. Remember though that days will be short and it can get very cold.
