Weather/temperature - I realise that Indonesia has a hot & humid climate, but would like to know how the people on this trip cope with the heat whilst undertaking the various activities;
Footwear - I have a pair of Brasher walking boots, but in view of the climate would these be too hot to wear together with walking socks? Obviously they offer the best ankle support etc.
Food & Water - what precautions are taken regarding safe water & food whilst on this trip?

Yes it is hot and humid in Bali, but it also depends on when you go. I spent two weeks there in September last year and had a fantastic time. The only day we had rain was on our last day in Ubud and It was flooded, just a sign what the wet season would be like.
However though the heat is not to bad if you drink a lot of water. The only water to drink over there is bottled water, which is really cheap. Do be careful and make sure that the seal is not broken. I bought water in bulk (ie. five litres at a time) and even used it to brush my teeth.
If you have drinks at resturants ask for no ice. Although this is usually safe as they have as all ice comes from one company or something. (I can not remember exactly). Iced drinks from the large hotels are fine.
In answer to your foot wear problem, it also depends on what you are tending to do. Myself i bought these really cheap pair of foam shoes. Similar to converse one stars, and found that i wore them more than my boots which I only wore once (and that was the day i arrived).
