This is a very difficult question to answer. Both tours are culturally rewarding and feature a lot of the same or similar itinerary features.
I think you may want to look at the different styles of each tour:
Wilderness Adventure is an "Adventurer" tour. This means that it is very much a grass-roots travel experience. On this tour you'll find a lot of freedom to achieve the goals that you want to, if you want to make this tour an in depth cultural experience you can do, if you'd rather go with the flow and relax you'll be able to achieve this as well. The one thing that separates this tour is that leave feeling as if you've had a real adventure and had a taste of a Thailand other tourists rarely see.
Thai Jungle Safari is a "Traveller" style of tour. The itinerary is more built up and there are more sights of interest and trips to monuments included as part of the itinerary. You'll also find that the transport and accommodation on this tour is a little more luxurious than others, more meals are also included. I think you would choose this tour if you wanted to see a side to Thailand that many tourists don't but want a few luxuries as well.
As I said above it's difficult to pick one tour out as being more culturally rewarding than another, both tours will leave you with amazing memories of an amazing country.
I hope I've helped make up your mind one way or another, it's a nice decision but not one I envy you having to make.

I lived in Thailand for a year and am going back on the wilderness tour. It seemed to really encompass th "Thailand" I remebered.
