More money questions.. Journey Across China trip

Hi...
Have read that it may be somewhat difficult to change money in Beijing and that therefore Imtrav recommends that an exchange be done at the airport. However, how easy is it to find Bank of China in places such as Xi'an, Yangsho, Dali, Kunming, etc... which are also on the trip? We plan to bring some Chinese currency when we first arrive in Beijing, but will also have US $ with us.....Will we have ample opportunity to make exchanges further into the trip, or should we do it all at once at the beginning?
Also what denominations of yuan would be most practicle for us to have for easiest payment?Please advise... Many thanks!!!!!
