The Vietnam tour I'm doing finishes in Saigon on the 28th and just wondered if anybody knew whether there were any special events/celebrations held on the 30th that might be worth staying on a few days after the tour for?

Well there is definitely one celebration.
This is Liberation Day of South Vietnam. The 30th of April marks the fall of Saigon (Ho Chi Minh) in 1975, and the final victory of the North Vietnamese Army.
