I've not been white water rafting in Chiang Mai, but hopefully someone out there will have some advice. The bamboo rafting that we do on the tour is very relaxing and not rough at all - it's so nice and chilled out floating down the river that you don't want it to end! The only time it might be rougher would be if the river was high, but if it was too rough then our groups wouldn't do it.
Your tour leader can give you advice on getting to Doi Suthep. There aren't as many taxis in Chiang Mai as there are in Bangkok, but there are lots of Songthaews (pick up trucks) and your tour leader will be able to give you tips on picking these up. On my trip to Thailand last year there were quite a few group members who made their own way up there with no problems.
