How much cash do you plan to take to Vietnam? - I can't imagine travellers cheques being much good.

It is advisable to take travellers cheques(TCs), just incase the improbable might happen. There are plenty of change places in Vietnam and especially where your tour is taking you.
In Hoi An if you take advantage of getting clothes made to measure, if you are short of cash, trust me the girls know where you can change your TCs at reputable places and most hotels will also change them for you. You can't really go wrong in Hoi An. A great place! Try to do the 'visit' 5 places of interest on one ticket(plan and note the closing times!!!) and see if you can wonder out of Hoi An a bit and visit the locals.
Given that you are there around then New Year, you should have a great time there!
