I have 2 questions about the boat trip portion of the trip.
Is it possible to stop at the Pak Ou caves on the second day of the journey?
Is it possible to take a fast boat on the second day of the journey?

Yes it is possible to stop at Pak Ou Caves. But believe me it is a waste of time. Spend a whole day at the Waterfalls by Luang Prabang instead, much more worth it.

With regards you second point.
The tours have a fixed itinerary this includes transport. There are free time periods which provide some flexibility other that what the tour offers.
