I can't decide between Vietnam Highlights, Beyond the HCM Trail and Explorer. Highlights seems like a slower - nicer pace with a trip to the beach, but skips Sapa which I've hear is not to be missed. Beyond the HCM has Sapa, but skips the beach - and what is a trip without a visit to the beach. Explorer also skips Sapa, and just might be too long (not sure I can go for 3 weeks) and a little too ambitious (a 7 hour hike). Lastly, since I am going on my own I am hoping to find a tour with other like travellers about 30 yrs. old. Which one is is right?

I am afraid that only you can decide which tour you want to go on. I would suggest that you read the trip dossiers for the tours and see how you feel after that. The Beyond the Ho Chi Minh trail is a traveller class tour and will have more included use a higher grade of hotel.
In terms of ages of people on the tour one cannot predict who will be on the any given tour. From my experience as a tour leader in Egypt ages on the tours will vary greatly. Most people would tend to be between their early to mid twenties and about 50. We have a minimum age of 18 and no upper age limit.
